Good Eats This Week
I blinked and then all of the sudden it was 11 days before Christmas. Things have been busy, and I haven’t been that inspired to create new things in the kitchen, but that doesn’t mean we haven’t been cooking great healthy meals! We’ve been on a little bit of a Paleo kick lately – Here is what we have been eating over the last couple of weeks:
I’m meal planning for the week today, and here is what is on the meal plan for the coming week!
Monday: Roasted acorn squash, kale salad, and roasted chicken breasts
Tuesday: Spinach salad, saurkraut, and spinach salad
Wednesday: Eggplant, broccoli, carrot, spinach, and chicken stir fry
Thursday: Quinoa, sweet potato, black bean, and spinach bowls with cilantro tahini sauce
Friday: Spicy & Sticky Coconut Honey Chicken with cauliflower rice
The meals are all prepped and ready in the fridge so everything can be pulled together easily and quickly during the busy week!
