Salt and Lime

No, sadly, we’re not talking about tequila shots or making margaritas in this post.  Instead, we’re going talk about a few lesser known applications for salt and lime.

Recently I found myself with a bumper crop of radishes.

Realistically, there are only so many things you can do with radishes and after awhile I was dreading ANOTHER run of the mill salad .

I had friends visiting from San Francisco and I really wanted to make them something from my garden that stood out. Then it hit me: salt, lime, and cumin and voila! This simple but delicious salad was born!  It only has a few ingredients, but its simplicity is what makes it spectacular.  Just toss all the ingredients listed below into a large salad bowl and serve!

1 bunch sliced radishes – I used red, white, and purple radishes

Juice of 2 limes

2 ripe avocados

1 cucumber

ground sea salt to taste

cumin to taste

The real stars of the show

My friend Alexis also has an amazing salt and lime recipe that makes plain green cabbage shine.  I served this cabbage salsa for guests at Cinco de Mayo and it the star of the show.

Here is what’s in the mix:

1 head of cabbage, shredded/chopped

1 bunch of cilantro, chopped

1 small red onion, chopped

1 jalapeno, seeds removed, diced

juice from 4 limes

salt to taste

cumin to taste

Chop up all the ingredients extra fine and put into a very large mixing bowl. Add salt, lime, and cumin to taste and toss. After doing this you will have a surprisingly tasty salsa on your hands.  I love putting it on sweet potato tortilla chips, or using as a base for taco salad.

All it takes is a little salt and lime magic.
