We’re on the Whole 30!

Hello Friends! How was your summer?!  Ours was wonderful and full of friends, family, travel and tons of delicious food.  With all of these fun times come lots of glorious food indulgences! But all this indulgence left us feeling a little…sluggish.  I am now working out about 6 times a week, and I felt like all of these little indulgences were adding up and counteracting the hard work I was putting in at boot camp, yoga, and on the trails & track. Meals For The Busy Week

Lately life has been a little different than in months past. Our friend Sam is staying with us while he is doing an internship in Portland. The weather has been unseasonably warm, I cut my hair short, and close friends moved into town!  Ben is coaching lacrosse at night and I have been exercising in the evenings most days of the week.  Suffice to say we have all been keeping really busy. For me, an evening work out means I get home late, which means... Read More

Good Eats This Week

I blinked and then all of the sudden it was 11 days before Christmas.  Things have been busy, and I haven’t been that inspired to create new things in the kitchen, but that doesn’t mean we haven’t been cooking great healthy meals!  We’ve been on a little bit of a Paleo kick lately –  Here is what we have been eating over the last couple of weeks: Crockpot Ropa Vieja with Cuban Style Rice Crispy sesame brussel sprouts with... Read More

The Grind

The week gets so busy sometimes.  We work, we get exercise, we run errands, and sometimes there just isn’t enough time to cook something healthy for the family (or, in my case, Ben and I).  I really, really enjoy cooking but without some organization, the weekly meals go by the wayside and are overtaken by the convenience of frozen burritos, boxed rice, and the all too tempting Pho take out restaurant across the street.  A point of clarification:... Read More

Other People’s Recipes

Oh hello holiday rush, how are you doing? Holiday Shopping…check! Holiday Cards Sent…check! Holiday Decorations…check! With all of the additional obligations that the holidays bring, it is hard for me to find time to be creative in the kitchen.  Thank goodness that I have access to the recipes of very talented cooks to sustain Ben and I throughout the week. Other Person’s Recipe #1  – Tomato and Feta Stuffed Chicken... Read More

Friday Night Vietnamese

When I have a cold, all I want to eat is a big steaming bowl of Pho. I call them “magic noodles” because without fail, they always make me feel better. Luc Lac Vietnamese Kitchen showed up during one of those cold, dreary, sniffley days. Admittedly, I was looking for PhoPDX. I had been there once before: ate the Pho, was a little underwhelmed by the food, totally disappointed by the cafeteria style ambiance, and never went back. But one day,... Read More

The Slow Cooker Diaries

We bought a slow cooker for Christmas and since then, no Sunday in our home has been the same. There is nothing better than waking up early on a weekend morning to the smell of something amazing coming from our kitchen.  So far we’ve had two slow cooker experiments.  For experiment number 1, I kicked back my feet on the couch and let Ben experiment with some chili First he cooked the stew meat with chili spices Then he put the whole mess... Read More
